Andrew Nugent grew up next door to the great historical wineworks at Penfolds Magill. He honed his craft as viticulturalist and vigneron amongst the illustrious wineries of old McLaren Vale. Henry Best was a highly industrious merchant and butcher who serviced Ararat miners during the Victorian gold rush. Domaine Christian Salmon endeavour to preserve the regional characters of Sauvignon Blanc from the rolling landscapes of Sancerre, the freshest fruit is treated to the most pristine ferments, completely unwooded and unoaked. Initial impressions of intense flint minerality, verging on gunpowder. Being so aromatic, the wine opens up with air, exuding nuances of the orchard, particularly ripe pear. Christian Salmon will perfectly accompany all refined cuisines, seafood such as fruits de mer au beurre blanc or artisanal cheeses like fromages de chevre.

Sauvignon Blanc is harvested from fully mature vines planted to calcareous clay soils. The bunches are lightly crushed immediately upon arrival to the winery. The musts are pumped fermenters and left to cold settle before the onset of a natural, local yeast vinification. Temperatures are closely monitored to avoid any possible risk of oxidation while retaining freshness and aromaticness. The wine is racked and treated to a minimal addition of sulphur dioxide, followed by a period of gentle rest prior to bottling.
